White Bean Chili


I decided to go a slightly easier route last weekend when planning my meal prep. I found this white bean chili recipe on Love Taza a few weeks ago and knew I had to try it. Especially since I got a chance to use my crockpot for the first time this season 🙂

white bean chili with chicken

4 15-oz cans great northern beans, rinsed
2 lbs chicken breasts
2 4 ounce cans green chilies (I used diced tomatoes with green chilies for some color)
2 tsp ground cumin
1 tsp oregano
1 1/2 tsp chili powder
1/2 tsp salt
3 cloves minced garlic
1 14 1/2 ounce can reduced sodium chicken broth
1 cup water (you can omit this or use 1/4 cup water so it’s not as watery as mine was)

cut the chicken into small cubes and brown over the stove
drain the beans, and place all the ingredients into the crock pot, mix well
cook covered on low 10-12 hours or high 5-6 hours
we eat it over rice with a bit of cheese on top.  makes 6-8 servings
